Mediterranean Salmon

  • 4 salmon fillets, (about 5 ounces each)
  • 2 tbsp. lemon juice
  • 1 tbsp. Sweet Basil
  • 1 tbsp. Granulated Garlic
  • 1 tbsp. Parsley
  • Cracked Black Pepper
  • 6 chopped green olives
  • 1 med to lg tomato, diced
  • 1 small red onion, diced
  • 1 med English cucumber, diced
  • 3 sprigs fresh dill


  1. Combine Basil, lemon juice, Granulated Garlic and Dried Parsley in a small bowl.
  2. Place salmon pieces in a shallow dish.
  3. Spray fillets with cooking spray sprinkle with Black Pepper.
  4. Spoon lemon/spice marinade over salmon.
  5. Cover and refrigerate for about 30 mins but for no more than one hour.
  6. Pre-heat grill to high.
  7. In a medium bowl, combine green olives, tomato, red onion, cucumber and dill.
  8. Stir to combine and set aside.
  9. With the fillets herb side down place on high heat grill.
  10. Cook for 4 minutes or until the edges turn white.
  11. Carefully turn fillets over and place aluminum foil over the fish.
  12. Move fish to a cooler spot on the grill or turn down the heat.
  13. Cook for 4 minutes or until the thermometer reads 145 F, the fish should be opaque.
  14. Top each piece of salmon with the tomato mixture, serve.
